Solo female going to NYC for 8 nights....?
.....so far here are my ideas:
Sex in the city tour
Statue of Liberty
I can't do Empire State as I have a major fear of heights!
Ground Zero
Museums and art galleries
5 Points graffiti
Central Park
I am an art major, so the art galleries are important to me, is there anywhere else you could suggest?

You need to add Ellis Island. It's easy to spend an entire day there if you like history, unlike the Statue of Liberty which can be done in a half hour since you can't go up in it anymore. You've already spent your hour or two waiting in line to go through security for the Statue of Liberty by that point anyway, so you might as well go on to Ellis Island.
Some other fun things to do: walk the Brooklyn Bridge (take the subway or a bus over to Brooklyn and walk back. Lots of people are doing it and if you do it during the day you should be safe.)
Take the double decker bus tours. They are hop on - hop off and every guide tells you different things, so you could do it over and over.
Take walking tours of ethnic neighborhoods. You will find the tours on-line if you google for them.
Go ahead and do the Empire State Building. I have a fear of heights also, but you won't even notice. When you are on top of the Empire State Building, you don't even feel high up. If you were to jump from the top, you would land on the roof a few stories below. You can't see down from there, you can only see out.
Pretend you are thinking about going to college and go get information from NYU and the Washington Park area.
Take the subway. This is an adventure in itself.
Go to Grand Central Station to say that you have been there; the same with Trump Tower, FAO Schwartz, Wall Street (rub the nose of the bull), St. Patrick's Cathedral, Chinatown, Little Italy, and the Dakota apartment building where John Lennon used to live.
Take the boat tour that goes around Manhattan at night - beautiful! (but take a taxi there because it's kind of creepy walking alone, even in a crowd.)
Give yourself a self-made scavenger hunt by looking up the statues in Central Park and then seeing if you can find them all. (Don't be like the idiots who jog alone at night there and think they're safe because it's so beautiful. Bad guys are there. Stay with the crowds.)
Go to Times Square in the morning and get half-price tickets for Broadway shows.
Go use the bathrooms in the lobbies of the fancy hotels so you can check them out.
